1 cup thick white sauce
2 cups ground cooked turkey (or chicken)
1 Tbs. onion, minced
1 tsp. parsley, chopped
Salt and black pepper, to taste
2 Tbs. water
3/4 cup bread crumbs
Oil for frying
Process turkey, onion, and parsley in food processor to finely ground. Mix turkey mixture into white sauce and season with salt and pepper.
Spread into an 8×8 pan, cover and chill at least 3 hours. Overnight is best.
Divide into 12 equal parts and shape into balls.
Beat egg and water until blended.
Dip each ball in egg and roll in bread crumbs.
Cover croquettes and chill at least 2 hours. Again, overnight is good.
Deep fry in hot oil until golden brown. Do not puncture crust.
Drain and keep warm in 350 degree oven.
Serve with chicken or turkey gravy.
